{Vegan & Lightning Fast} Velvety hummus soup. A super healthy fast food.

W ir have just found the super healthy fast food soups for us - the total blast! And so simple: The fresh ingredients are first simply pureed in the blender velvety and then cooked very briefly. The result: lightning-fast, delicious soups that taste totally fresh and still contain as much as possible all the healthy nutrients from fruits and vegetables - hot super-smoothies, so to speak. Hach! By mixing them, soups are automatically very velvety and creamy, so you do not have to use milk or soy products (unless you want that). In addition, vegetables can usually be simply peeled into the blender and fruit, including the core casings, is used.

The rediscovery was triggered by a huge package that arrived last week. This was a Vitamix 750, which was provided to me as a test device. The thing has not only a 2 hp engine, but also different mix programs and among other things, one for hot soups. The heat is simply generated by the speed of the cutting blades. This is quite amazing and I will soon again detail the new favorite toy report. But of course you can also make the lightning fast soups with a conventional blender and a pot. So go:

Here comes the recipe for 4 portions of hot, fresh, delicious hummus soup

Drain 480 g of chickpeas from the tin into a sieve and rinse briefly under running water. Put aside 4 tbsp of chickpeas for the garnish.

The remaining chickpeas with 800 ml of water , 1 small carrot , 1 red onion 1 garlic clove , juice 1/2 lemon , 3 dried dates , 1-2 tablespoons Tahini (Sesame paste), 1 tablespoon of apple cider vinegar , 1 teaspoon vegetable stock , 1 tsp ground cumin , 1 teaspoon garam masala , Add 1 pinch of chilli , salt and black pepper to a blender.

If you still have a few vegetable remnants that need to go, you can just do it also throw in the soup. For example, instead of apple cider vinegar you can also use 1/2 an apple.

Puree all the ingredients at high speed to a very smooth soup. Vitamix 750 owners choose the program hot soups .

All other mixer owners choose the highest level and mix until a very velvety consistency is achieved. If the soup is too thick, just add some water. Then the cold, pureed soup comes into a pot and is boiled once with stirring. Then let simmer for 2 minutes on mild heat.

Season the hot soup with salt and pepper again, spread on soup cups and with the remaining chickpeas garnish with a little ghee or olive oil and with fresh coriander or parsley . If you like it spicy, pour 1-2 drops of Tabasco or chili sauce over the soup.

Tip : If your blender is not quite as powerful or you're working with a blender, you might want to consider making sure that you briefly pass the soup through a fine mesh before cooking.
